Zucchini Stew my way
  • Ćušpajz - Zucchini Stew, is a Serbian traditional dish that is served as a side dish with meat and fish. Rich in vegetables and full of vitamins. It's easy to make and ready quickly. It's very tasty, and I often make it like my mom. Follow recipe.


Ingredients: simple, total time: 70 minutes. 4 serving
  • 3 Tbsp Olive oil EVO

  • 3 zucchini/ grated

  • 2 carrots/ grated

  • 1 onion/ finely chopped

  • 3 cloves of garlic/ minced

  • 2 spring onions/ finely chopped

  • 3 small potatoes/ diced

  • 1 Tbsp of flour

  • 100 ml milk/or cooking milk

  • 1 Tbsp dry spice Vegeta

  • 1 Tbsp fresh parsley/ finely chopped

  • 2 Tbsp fresh weed dill

Preparation:
  1. Prepare all the ingredients as described above.

  2. Fry the chopped onion and spring onion in olive oil for about 2-3 minutes to moderate heat.

  3. Then add grated carrots, diced potatoes, stir well add spices: salt, pepper, Vegeta dry seasoning, pour 100 ml water, cover, let it simmer for 10 minutes.

  4. Then add grated zucchini, stir, add a little water again, cook for about 15 minutes.

  5. In the meantime, when the vegetables have softened, add chopped garlic and stir well. Cook another 25 minutes.

  6. Combine flour with a little milk, add it to the zucchini, cover with the rest of the milk.

  7. From the herbal seasoning, add parsley and weed dill, stir well, cook for another 7 minutes.

  8. Control the taste add more spices as needed, salt and pepper if necessary.

  9. Turn off the heat, wait for it to cool down, and serve with steaks as a side dish.

NOTE:

  • If you are intolerant to dairy products, add water instead of milk.

  • Keep the rest of the food in the refrigerator for up to 3 days, covered.
