Wild Duck in Wine Sauce

  • Wild duck in wine sauce with aromatic ingredients, made in a simple way. It is very tasty and juicy. Follow recipe.

Ingredients: easy, total time: 80 min. 4 servings
  • 1 wild duck

  • 3 Tablespoons sugar

  • 1 small apple

  • 1 celery root/ finely chopped

  • 40 g butter

  • 100 ml of olive oil

  • 1 onion/ finely chopped

  • 2 cloves garlic/ finely chopped

  • 1/2 bunch of primrose leaf/ finely chopped

  • 200 ml of white wine

  • 200 ml of vegetable broth

  • juice of 1 orange,

  • salt and pepper to taste

Preparation:
  1. Wash the duck with water, to which a few tablespoons of vinegar have been added.

  2. Put an apple and celery root in the abdominal cavity, because that way the smell of the fish that the duck ate can be removed.

  3. In a deeper pan, heat 20 g butter with 50 ml of oil, put the duck and bake to brown on all sides. Add salt, pepper, add a few tablespoons of broth or warm water, cover, and simmer on low heat for about 30 minutes.

  4. Take out the duck and cut it into 4 parts, remove the celery and apple.

  5. In a slightly larger pan, or similar dish, sauté the finely chopped onion, garlic in the remaining oil and butter until soft, add the finely chopped parsley leaf, place the duck pieces, add the wine, sauté until simmering. Finely, add the broth and orange juice.

  6. Cover and simmer over low heat to soften the meat and thicken the sauce.

  7. Cut the finished duck into smaller pieces, pour over the sauce.

  8. Serve with rice or potato dough croquettes. Buon appetito!
