Walnut Bars

  • A wonderful Serbian delicacy, walnut bars, which everyone adores! They are preparing for ordinary days, because they are extremely easy to make, and they can also be made before the holidays, because the delicacy is irresistible for the youngest, but also for the elderly population. These bars consist of walnut bark and cream that are baked, topped with a no-bake walnut filling and topped with ground walnuts once more. It is very easy and quick to prepare. Follow the recipe.

Ingredients: baking pan 35x 25 cm, simple, total time: 1h 15 min. 40 bars

Walnut Bark:

  • 150 g of butter/ or margarine -beaten and at room temperature

  • 150 g of powdered sugar

  • 70 g of flour

  • 150 g of ground walnuts

  • 4 big egg whites/ beaten into stiff peaks

Yellow filling:

  • 4 big egg yolks

  • 140 g of sugar

  • 1 bag vanilla sugar/ 10 g

Filling with Walnuts:

  • 100 ml of milk

  • 100 g of granulated sugar

  • 50 g of butter

  • 170 g of ground walnuts

For Sprinkle Cake:

  • 70-80 g of ground walnuts/ or to taste

Preparation:

Walnut Bark:

  1. Beat the butter that has been at room temperature, then add the powdered sugar and beat with a mixer so that the walnuts do not fall apart, then add the flour, then the ground walnuts. Combine everything well into a compact mixture with spatula and set aside.

  2. Beat the egg whites until stiff, using a mixer for longer.

  3. After that, gradually add the beaten egg whites to the mixture with a spatula and stir everything well.

  4. Put baking paper in the pan and spread the mixture and level it. The dimensions of the pan are 35 × 25 cm.

  5. Bake Bark on 180 °C about 20 minutes. While the crusts are baking, make the yellow filling.

  6. Then take out the bark, and reduce heat to 50 °C.

Yellow Filling:

  1. Beat egg yolks with sugar and vanilla sugar until foamy, about 3-5 min. until it is a smooth mixture.

  2. Pour cream over the baked crust and level well with help of a cake knife.

  3. Bake in oven 50° C, 20 minutes.

  4. Leave the crust and filling to cool well.

  5. Meanwhile, make the walnut filling.

Walnut Filling:

  1. Heat milk with sugar, and butter on low to moderate heat. When it boiled, add the ground walnuts. Stir until the mixture becomes a little thick, cook about 5 minutes. Leave to cool, about, 15–20 minutes.

  2. When the cream and crust have cooled, spread with walnut filling and level it.

  3. Then sprinkle with ground walnuts.

  4. Leave dessert to cool overnight, then cut with a sharp knife into bars measuring 5 × 2 cm. Serve.

NOTE: For the Queen's bars, the composition is the same, only add 100 g of chocolate to the filling with walnuts, spread the same filling when the crusts and filling cool down!
