Vegetable Fritters

  • Fantastically delicious vegetable burgers, that you have must try. Follow recipe.

Ingredients: simple, total time: 40 min. 6 servings
  • 600 g of potatoes

  • 200 g of carrots

  • 200 g of zucchini

  • 2 eggs

  • 80 g of breadcrumbs

  • 40 g of grated Parmesan

  • 2 fresh basil leaves

  • peanut or sunflower oil (for frying)

  • salt

  • pepper

Preparation:
  1. Peel the potatoes and carrots, peel the courgettes.

  2. Grate the vegetables using the special vegetable grater, with large holes.

  3. Beat the eggs together with the grated Parmesan, a pinch of salt and a sprinkling of pepper.

  4. In a bowl, pour the grated vegetables, the beaten eggs and the finely chopped basil.

  5. Then add the breadcrumbs and mix carefully.

  6. In a pan, heat abundant oil for frying; as soon as the oil is hot, pour the mixture into spoonfuls and cook the pancakes until golden, turning them occasionally.

  7. Drain the pancakes very well and place them on a plate covered with absorbent paper, to absorb the excess oil. Season with salt if necessary and serve.
