Vegan Serbian Paprikash

  • Vegan Paprikash stew enriched with various vegetables, with the addition of Serbian ajvar, a light and tasty meal for every day! Preparation is quick and simple. Follow recipe.

Ingredients: simple, total time: 70 min. 2 - 3 serving
  • 1 large onion/ finely chopped

  • 2 carrots/ cut into rings

  • 1 parsnip/ diced

  • 3 cloves of garlic!/ minced

  • 4 potatoes/ diced

  • 1 big tomato/ chopped or 2 Tbsp tomato concentrate+water or 300 ml juice

  • 1 full spoon of ajvar

  • 1 red pepper/ diced

  • 1 green pepper/ diced

  • 3 Tbsp oil for frying

  • 1 Tbsp parsley leaf/ finely chopped — or celery leaves

Preparation:
  1. Prepare all the ingredients as described above.

  2. Fry finely chopped onion in oil.

  3. When the onion has softened, add chopped pepper, carrot, and parsnip to stew.

  4. After 10 minutes, add chopped garlic, 1 spoon of ajvar, ground paprika and diced potatoes.

  5. Pour a more water (to cover all vegetables) and cook for about 40-45 minutes.

  6. When the broth has acquired a nice color, season to taste.

  7. Towards the end, add chopped parsley or celery leaves.

NOTE:

  • If you want a thicker paprikash, blend one potato with a little liquid.

  • Keep the paprika in the refrigerator for up to 4 days.

  • You can pack Paprikash in the fridge in an aluminum box with a lid. Storage for up to 3 months.
