Tulumbe Turkish Dessert

  • The original recipe for tulumbe, a famous Turkish dessert. They are baked in oil and are very soft on the inside and crispy on the outside, it is a real pleasure to make them and enjoy them. Follow the recipe.

Ingredients: cup measure 200 ml, simple, total time: 60 min., 30 tulumbe

Syrup:

  • 2 cup of granulated sugar

  • 1.5 cup of water

  • 1 tsp vanilla extract/ or 2 bag vanilla sugar/ 20 g

  • 1 Tbsp lemon juice/ optional

Tulumbe Dough:

  • 1/2 cup of milk

  • 1/2 cup of water

  • 1 full Tbsp powdered sugar

  • 30 g butter

  • 60 ml oil

  • 1 cup of flour

  • 4 medium eggs +1 small egg/ or half of medium egg

and:

  • 500 ml oil for frying

Preparation:

Syrup:

  1. Pour sugar and water into a saucepan, and vanilla extract, and stir. Heat on low to moderate heat.

  2. Allow to boil for another 2-3 minutes, then remove from heat.

  3. Leave the syrup to cool.

Tulumbe Dough:

  1. Pour powdered sugar, 100 ml of milk, 100 ml of water, 30 g of butter, and 60 ml of oil into a saucepan and mix.

  2. Put it on the stove, heat it on low to moderate heat and stir.

  3. When it started to boil, add flour, stir with a wooden spoon until it thickens.

  4. When it has thickened, leave the stove on for another 30 seconds, then turn it off. Cook for another 1 minute on the switched off hot plate. As soon as the dough separates from the pan, it means it is ready.

  5. Transfer the finished dough to a deep bowl and let it cool for 5 minutes.

  6. After that, add the eggs gradually, one egg at a time, and mix at the same time.

  7. From time to time, use a spatula to pick up the remains of the dough from the side and add to the mixture.

  8. Continue mixing with a spatula until you get a mixture suitable for the dough.

  9. Fill the syringe with the mixture, the attachment must have 5 cuts like a star.

  10. Now, there is one trick when baking, which is that the oil must be cold when you add the tulumbe that you will cut with scissors. Which means that you have to cool the oil for about 10 minutes between each round of cooking. (If you put the tulumbes directly on the hot oil, the dough will crack! Measure tulumbe is 7 cm.)

  11. Fry them on all sides until they are well browned.

  12. Turn the tulumbe with a stick.

  13. Place the fried tulumbe on kitchen paper to absorb excess fat.

  14. Dip a few pieces of the tulumbe into the syrup and soak them for about a minute, then place them on a tray with edges.

  15. Pour the rest of the syrup over them.

  16. Leave the tulumbe to cool in the fridge for 1 hour.

  17. Serve!
