Thick Potato Soup with Bacon and Vegetables Lena

  • Thick potato soup with bacon and vegetables, my way. Very good recipe and delicious in my way of preparation. Follow recipe.

Ingredients: simple, total time: 45 min., 4 servings
  • 1,5 liters water

  • 300 g of chopped bacon

  • 3 medium carrots

  • 1 larger onion

  • 3–4 flowers of broccoli boiled in water

  • Fresh bunch of primrose finely chopped

  • 1 clove garlic/ finely chopped

  • 400 g potatoes or 4-5 large potatoes

  • 50 g butter

  • salt and pepper to taste

  • dry spice/Vegeta or /1 dice cube soup

  • toasted bread in cubes

  • Optionally sour cream and Parmesan for sprinkling, chives chopped

Preparation:
  1. Wash and clean all the vegetables. Cut the carrots in half, if they are large, cut them into two parts in the middle. Cut the potatoes into cubes, finely chop the fresh parsley. Then take the bacon and cut to a length of 3 cm and a thickness of 1.5 cm. and set them aside.

  2. Take a medium deep pot and fry the chopped onion and garlic in oil and stir, add the diced potatoes and stir after

  3. Add butter for 5 minutes and mix well and pour a little water and add sliced ​​carrots to larger pieces and add a little pepper to taste and dry spice. Occasionally add water as needed! When the potatoes have softened, take out the carrots that have been cooked with a fork and put them aside. Take a blender, sift everything in the pot well to get a thick mass. If you need to add more water, it should be, it depends on what kind of thick soup you want and leave it on a moderately low heat to simmer for another 10 minutes, and season with finely chopped parsley. Extinguish the fire. Meanwhile, cook the broccoli in salted water for a few minutes

  4. After, take the pan and fry the bacon well. The bacon must be fried harder but not charred :) and when it is done, put it aside. Serve the soup with diced toasted bread and bacon and a piece of carrot and broccoli in a plate, you can put one tablespoon of sour cream, or grated Parmesan or chives chopped. Pleasant!

NOTE: If you like chicken meat, you can combine it with this soup together, cook the meat separately and when it is ready, cut it into smaller cubes and add it to the soup when everything is done.
