Stump Cake

  • Stump Cake is famous traditional cake in Serbia, and everyone loves it and prepares it for some festive pieces, very tasty and irresistible that you must try. Follow recipe.

Ingredients: medium, total time: 80 min.

Bark:

  • 6 egg whites

  • 5 Tablespoons sugar

  • 100 g of ground walnuts

  • 2 Tablespoons flour

Cream:

  • 6 egg yolks

  • 5 Tablespoons sugar

  • 250 g butter

  • 200 g of powdered sugar

  • 150 g of strong, dark chocolate

More:

  • 50 g sugar (I put 2.5 tablespoons)

  • 50 gr walnuts handful

Preparation:
  1. Turn on the oven to heat to 200 °C.

  2. Beat the egg whites with the addition of sugar.

  3. Stir until the sugar has dissolved.

  4. Then add ground walnuts and flour and lightly mix everything together.

  5. Put baking paper in the oven tray, under which we coated the tray with oil. (the painting)

  6. Shake the mixture and bake for 15 minutes.

  7. Immediately wrap the baked crust in a wet cloth and leave to cool.

  8. You will bend easily because the crust is really soft.

  9. Steam the egg yolks and sugar.

  10. Cook for about 15 minutes.

  11. Remove, then add the chocolate and stir until melted, then leave to cool.

  12. During that time, melt the sugar (those 50 g), then add the walnuts and shake everything on a greased baking sheet and leave to cool. (the painting)

  13. The walnuts will cool down quickly, so it is necessary to grind them on a fine grid, to be finely ground.

  14. Beat the margarine with the powdered sugar, then add the cooled chocolate cream and mix.

  15. Add ground caramelized walnuts at the end and mix everything.

  16. Unroll the crust and apply 3/4 of the filling, wrap the roll and spread the rest of the filling around.

  17. Optionally decorate.

  18. Keep the stump cake in the fridge for 2 hours so you can serve it.

2. Recipe Stump Cake
Ingredients:

Bark:

  • 7 eggs

  • 7 Tablespoons sugar

  • 120 g of ground walnuts

  • 1 Tablespoon sharp zero

  • 100 g of cooking chocolate

Cream:

  • 4 eggs

  • 250 gr sugar (I put less)

  • 250 g butter

  • 100 g of cooking chocolate

Grilling:

  • 150 g of sugar

  • 150 g of ground walnuts

Preparation:
  • Make first Grilling Walnuts and Sugar

  1. Put the sugar in a bowl to melt and then shake out the walnuts.

  2. Stir and pour the mass onto the work surface to cool.

  3. Crush the cooled mass with a hammer, but not too finely.

  4. Whisk the egg whites in solid snow with the addition of sugar and egg yolks one by one. When the mass is beaten enough, add the walnuts in which you have mixed a spoonful of flour.

  5. Melt the chocolate and mix it into the whipped mass.

  6. Shake the mass in a baking pan (the longest and widest you have) lined with baking paper. Bake in a preheated oven at a moderate temperature, about 175 ’.

  7. Fold the baked crust into a roll while it is warm.

  8. Steam eggs with sugar, stirring constantly. As soon as you feel that the mass has thickened enough, remove from the steam and cool.

  9. Put butter in the cold mass and mix.

  10. Separate one third of this cream, mix in the grill and stir in the cream. You will coat the whole unrolled roll with cream.

  11. Cut the rind into five equal parts. Wrap first in a roll. At the end of the first belt, continue to roll in the next round until you have used up all five.

  12. Add melted chocolate to the rest of the cream (2/3). Coat the outside of the stump with this cream. Using a fork, spread the cream, imitating the bark of the tree. Leave the cake to cool at room temperature, you can also on the terrace, but covered. Serve slices.

NOTE: The cake is very strong, so one small piece for 2 days is enough. You can sprinkle a little grill around the stump, imitating sand / earth. If you have coconut flour in it, sprinkle it to mimic moss.
