An old-fashioned way of preparing strudels, delicious soft and juicy. A treat that everyone wants. Follow recipe.
Ingredients: simple, total time: 120 min.
For the Dough:
500 g flour
1 egg
200 g butter
150 ml of milk
50 g sugar
1/2 a cube of fresh yeast-22 g / or a bag of dry yeast 10 g
pinch of salt
For Fill:
400 g ground poppy seeds
200 g sugar
1 lemon, grated peel
1 bag vanilla sugar/ 10 g
300 ml of milk
50 g breadcrumbs
For Coating:
1 egg yolk
1 white
Preparation:
Sift flour into a bowl and add chopped butter. Combine butter and flour well.
Add the yeast in lukewarm milk with one tsp sugar and 1 tsp salt. Leave the yeast to rise for 15 min.
When the yeast has risen, add it to the flour with butter, mix well and add 1 egg.
Work the dough with a spoon and then start working with your hands, knead a smooth, compact dough.
Divide the dough into 2 parts, or 3, equal noodles and leave it covered with cling film in the refrigerator for about 30 min.
Take the dough out of the fridge and spread it into a rectangular shape, about 1/2 a cm thick.
Put the milk to cook with the sugar, and when it boils, add the poppy seeds, pretzels, vanilla sugar and lemon zest.
Cook for two, 3 min, stirring constantly.
Remove from the stove and allow the filling to cool completely.
Divide the cooled filling into as many pieces as you have noodles.
Coat each part of the developed dough evenly, leaving 1 cm from the end blank.
Twist the roll tightly, taking care not to squeeze the filling.
Arrange the strudels in an oiled pan and let them stand for about 20 min.
Coat them with beaten egg yolk and leave them for another 15 min.
Then coat with beaten egg whites.
Leave the strudel for another 15 min, just as the oven heats up to 180 °C.
Bake the poppy seed strudel for about 30 min.
Wait for it to cool completely, then cut it into slices and serve. Enjoy in bites!
