Sponge Cake Base

  • A simple recipe for cake with all kinds of cakes and desserts. Preparation is easy and fast. Follow recipe.

Ingredients: simple, total time: 50 min.
  • 215 g flour 00

  • 200 g of sugar/ divided on half

  • 5 eggs / separate whites and yolks

  • 1 lemon /juice and grated zest

  • 1 bag vanilla sugar/ 10 g optional

Preparation:
  1. Separate the egg whites from the yolks.

  2. Beat egg yolks with half the amount of sugar, beat until you get a creamy and lighter mixture.

  3. Then add grated lemon peel and juice. Gradually add flour.

  4. Mix into a compact mixture.

  5. Put the resulting mixture aside.

  6. Beat the egg whites until frothy at high speed and in circular motions for about 5 minutes.

  7. Gradually add the other half of the sugar with the help of a spoon and mix at the same time. I also added a 1 Tablespoon lemon juice, which will strengthen the snow better!

  8. When you have obtained the desired snow hardness. Add with a spoon to the egg yolks mixture and stir with a spatula from top to bottom.

  9. Grease the tray with butter and sprinkle with flour. Shake off the excess. Sift the mixture and level it.

  10. Bake in a preheated oven at 180 °C for about 30-35 minutes.

  11. Leave to cool, then use as a base for cakes according to the recipe.

2. Recipe Sponge Cake
Ingredients: simple. total time: 50 min.
  • 6 eggs/ separated

  • 7 full Tbsp of granulated sugar

  • 6 Tbsp of flour

  • 1 bag baking powder / 10 g

  • oil for baking dish/ as needed

Preparation:
  1. Separate the whites from the yolks, then beat the whites with a mixer for about 4-5 minutes, until you get whipped cream. Add sugar to it and beat for another 2-3 minutes.

  2. Previously separated egg yolks, now gradually add them to the egg whites, one by one, and beat everything for about 2 minutes, until it is combined.

  3. Put the flour and baking powder in a separate bowl and mix it well, then add it all to the pre-beaten mixture, gradually little by little (to avoid lumps from the flour) and beat it with a wire, not a mixer.

  4. Cover the tray with baking paper and sprinkle a little oil on it and spread it.

  5. Add the mixture and bake for about 15-20 minutes at a temperature of 180°, and bake until it turns yellow.

  6. To check if it is baked, take a toothpick, poke the cake somewhere in the middle. If there are no traces of dough or mixture, then it means that it is ready, and you can take it out, otherwise leave it to bake.

  7. Leave the sponge cake to cool and remove the baking paper.

  8. Use for dessert as needed.
