Spaghetti with Sardines in Tomato Sauce

  • I love Mediterranean-Italian food because when you are always in a time crunch there is a great solution to get a satisfying and healthy meal, and at the same time it is ready in just 20 minutes. One of those recipes is this spaghetti with sardines that is prepared very simply and very quickly. Follow the recipe as I prepare it.

Ingredients: simple, total time: 25 min., 2 servings
  • 240 g spaghetti

  • 1 teaspoon salt

  • Olive oil EVO

Sauce:

  • 1 Tbsp Olive oil EVO

  • 1 onion/ finely chopped

  • 1 Tbsp fennel leaves/ finely chopped

  • 2 cloves of garlic/ minced

  • 2 anchovies

  • 1 Tbsp pine nuts

  • 1 piece of dried tomato/ finely chopped and filtered

  • 170 ml tomato paste

  • 1/2 tsp basil and oregano/ or to taste

  • 2 can sardines/ filtered

  • salt and black pepper to taste

  • 2 handful Toast cubes for sprinkle/ optional

  • Parmesan cheese/ for sprinkling as you like — optional

Preparation:
  1. Prepare all the ingredients as described above.

  2. Add pasta water, 1 teaspoon of sea salt and 1 tablespoon of olive oil. Wait for it to boil.

  3. While you wait, make the spaghetti sauce.

Sauce:

  1. Finely chop onion together with the fennel leaf as small as you can, by hand.

  2. Fry the onion and fennel leaves in olive oil, until the onion becomes glassy.

  3. Add the chopped garlic, anchovies and pine nuts, stir gently over low to moderate heat. As soon as the garlic gives off its fragrance, add the chopped dried tomato, stir well, then pour the tomato paste, basil and oregano, stir and cover. Cook for about 7 minutes, and reduce heat.

  4. Meanwhile, add the spaghetti to the boiling water, cook the alla dente according to the instructions.

  5. In sauce add coarsely chopped sardines, control the taste, add spices as needed.

  6. Before draining the finished spaghetti, take the liquid where it was cooked with a ladle and put it in a small cup.

  7. Drain the spaghetti well and immediately put it in the sauce, stir all well, turn off heat.

  8. Serve with roasted cubes as you like or grated Parmesan cheese.
