This is my personal recipe and there is nothing better than this, I sign it. Bolognese famous ragout from Italy that always goes fantastically with spaghetti or macaroni and even lasagna, I recommend you make it according to my recipe because you will not find a better. Follow recipe.
Ingredients: simple, total time: 60 min. 4 servings
350 g minced meat for Bolognese
100 g bacon pork cheek / diced
250 ml tomato juice
2 Tablespoons of tomato paste
400 gr spaghetti
1 stalk celery/ chopped
1 carrot/ finely chopped
150 ml meat broth
1 teaspoon thyme
1 teaspoon basil
1 teaspoon oregano
1 teaspoon ground red sweet pepper
2 Tablespoon extra virgin olive oil/ to cook pasta and bacon
pepper, to taste
salt to taste
Parmesan cheese grated/for sprinkle
Preparation:
Start the first preparation of the sauce by chopping: the celery, onion, and carrot together in a blender, and set aside. Fry the diced bacon in a pan with little oil, 7-8 min. Put the fried bacon on the side.
Put all the blended vegetables in a deep pan in the same oil where the bacon was fried. Simmer for about 5 – 7 minutes.
After 7 minutes of stewing, add the minced meat. Cook about 15 minutes with occasional stirring.
Add the tomato juice, tomato paste, meat broth, salt, pepper, oregano, basil, red ground pepper, thyme. Cook for 35 min. Be careful not to add too much salt because the bacon is already salty!
10 minutes before the end, put the bacon in the sauce stir, occasionally.
When you are completing the cooking of the sauce, boil the spaghetti in plenty of lightly salted and water, (put also 1 tablespoon of olive oil in the water , 1 liter per 100 g of spaghetti), taking care to drain them alla dente. Cook the spaghetti for about 8 minutes.
Put the spaghetti back in the same pot where they cooked. Add half of the sauce, stir the pasta well, then serve it immediately on the plate, seasoning it with the rest of the sauce and Parmesan cheese and basil leaf. Buon appetito!
NOTE: You can pack the leftover sauce prepared in this way into containers and put it in the freezer. When you take them out, add a little tomato paste, and a little water if needed, cook on medium heat until well combined. This is my recipe, I hope you like it. Taste is wonderful!
