Ingredients: simple, total time: 35 min. 6 serving
180 ml brewed espresso coffee/ cooled and maybe more
2 Tablespoons sweet Marsala wine/ 30 ml
240 ml heavy cream whipping cream/ cold from refrigerator
1 teaspoon instant espresso powder
1 teaspoon vanilla extract
60 g powdered sugar
250 g mascarpone cheese
12 Savoyard cookies Italian/ ladyfingers
cocoa powder/good quality for dusting before serving
Preparation:
Mix the cooled coffee with the sweet Marsala wine in a small bowl.
Beat the heavy cream with the powdered sugar and instant coffee powder in a medium bowl until very soft peaks form.
In a small bowl, mix mascarpone cheese and vanilla extract until combined.
Add the mascarpone mixture to the whipped cream and beat just until stiff peaks form.
Savoyard cut in half and dip in coffee. Place the two halves in the bottom of a serving glass. Top with two spoonfuls of the mascarpone mixture and repeat so you have two layers of Savoyard and two layers of mascarpone cream.
Repeat this with the remaining Savoyard cream and mascarpone in the remaining 5 glasses.
Cover with plastic wrap and refrigerate for at least 2 hours to set.
To serve, sprinkle the tops with sifted cocoa powder.
