Fried eggplant without flour in a simple way. They are very tasty and juicy. You can eat them as an appetizer with salad or steak, or even as a sandwich. Follow the recipe.
Ingredients: simple, total time: 45 min., 4 serving
2 eggplants/ cut into circles 5-6 mm
1 tsp salt
For Rolling:
1 cup breadcrumbs/ 200 ml
40 g Parmesan cheese/ grated
3 eggs
3 Tbsp milk
1/2 tsp oregano
1/2 tsp black pepper
and:
oil for frying
Preparation:
Wash the eggplants and cut carefully it into 5-6 mm thick rings with skin.
Sprinkle salt on both sides and allow resting for 30 minutes.
After the time has passed, press with your palms and drain the excess liquid.
In a deep plate add eggs, milk, little salt, black pepper and oregano and beat well.
In another plate, pour the breadcrumbs and grated Parmesan cheese and mix well.
Heat the oil over medium heat.
Roll well in the egg mixture, drain well, then roll well a few times in the breadcrumbs and Parmesan mixture.
Gently lower into hot oil and fry until golden brown on both sides.
Using a slotted spoon, remove the fried eggplants on a kitchen towel on a plate to absorb excess fat.
Serve warm with salad and some steaks.

Keep the rest of the fried eggplant, covered, in the refrigerator for up to 2 days
