Ingredients: simple, total time: 70 min. 4-5 serving
Dough:
750 g potatoes boiled in skin
1 egg yolk
1 teaspoon salt
pinch of pepper/ or to taste
pinch of nutmeg
80 g grated Parmesan cheese
30 g flour
1 Tablespoon baking powder
For Rolling:
flour as needed
breadcrumbs as needed
2 egg yolks
80 g butter
and:
plenty of vegetable oil
Preparation:
Wash the potatoes well and put them in the water to boil for about 25–30 minutes.
After that, leave them for 20–25 minutes to cool, peel and grind them on the machine.
Put the ground potatoes in a deep bowl and add one egg yolk, salt, nutmeg, pepper, grated Parmesan, flour and baking powder. Knead dough well in soft and smooth composition.
When you have done that, divide the dough into 4 parts and roll it into a smooth and thin roll.
Cut every 5 cm.
Flour the tray and arrange small rolls and roll them.
Beat the melted butter and egg yolks into a uniform mixture with a hand whisk, then add a little flour, so that you get a slightly thicker mixture like for pancakes.
Roll small rolls in a mixture of egg yolks, butter, and flour, then roll them into crumbs well on all sides.
Immediately fry them in hot oil.
Fry until golden brown on all sides.
Place on a kitchen towel to absorb excess fat.
Serve warm.
