Shampite cake is a traditional cake from Serbia. Simple and fast! This is a combination biscuit crust recipe. Although the original recipe is that the top and bottom crusts are made of puff pastry. If you want, you can use puff pastry and bake it in the oven, that's how shampita is in the original. Follow the recipe.
Ingredients: simple, total time: 55 min.
Biscuit:
5 egg yolks
5 Tbsp of granulated sugar
5 Tbsp of oil
5 Tbsp of milk
5 Tbsp of flour
1/2 tsp of baking powder/ 5 g
Whipped Cream:
5 egg whites
12 Tbsp of granulated sugar
1 Tbsp of lemon juice
vanilla flavor as desired
Preparation:
Biscuit:
Put 5 egg yolks and 5 spoons of sugar in a deep bowl and beat well with a mixer until foamy, until the mixture becomes smooth and lighter.
Then add oil, milk and continue mixing.
Add flour and baking powder and combine everything together by hand with a wire.
Pour the mixture into a 24×24 baking sheet and bake in a preheated oven for 10 minutes at 180 °C.
Cream:
In another bowl, put the egg white, sugar, lemon juice, vanilla extract and mix everything well with a whisk.
Then, reduce the temperature of the stove to medium temperature and steam it.
Put the bowl in which we have combined the egg whites with sugar, lemon juice and vanilla extract on the pan.
The water from the pan must not touch the bottom of the pan. It is recommended that the bowl be made of glass or metal.
Beat continuously with a mixer for 10 minutes.
Remove the bowl from the pan and continue to beat with a mixer on the worktop for another 5 minutes.
Spread over the crust and distribute evenly with a spatula.
Draw lines on the cake with a fork to decorate.
Cut the stake after 10 minutes.
