A traditional layered Russian salad of mushrooms. Follow recipe.
Ingredients: preparing total : 1 hour
2 potatoes
1 Tablespoon butter
4 cups chopped mushrooms
4 hard-boiled eggs, peeled and diced
2 red onions/ finely chopped
1 cup mayonnaise/ or to taste
1 cup finely chopped pickles
Preparation:
Put the potatoes in their shells in salted water, wait for it to boil, then reduce the heat to a minimum and let it cook for about 15–20 minutes. When done, drain the potatoes and leave to cool. When the potatoes have cooled, peel them and cut them into cubes.
Melt the butter in a pan over a moderate heat, add the mushrooms, simmer until they turn brown for about 10 minutes. Remove from the heat and allow cooling.
Take the mold in which you will serve the salad. Arrange the diced eggs on the lower part of the mold, then arrange the finely chopped onion and 1/4 mayonnaise over and 1/2 the mushrooms and all the potatoes to be on top. Arrange 1/4 cup of mayonnaise on top, all the pickles, remaining eggs and another 3 1/2 tablespoons of mayonnaise.
Finish the layers with the remaining onions, mushrooms, and mayonnaise.
When you are all done and put it in the fridge to cool for 2 hours to harden. Put it on a plate and lift the mold. You can serve it cold. Enjoy in bites!
