Risotto with Mussels

  • My recipe is fantastic with mussels. Risotto taste of Mediterranean and shellfish. It is easy to prepare and ready quickly. Try to make it the same as me. Follow recipe.

Ingredients: simple, total time: 45 min. 4 serving
  • 500 g mussels

  • 30 g butter

  • 1 onion/ finely chopped

  • 2 clove garlic/ crashed

  • 70 ml white wine

  • handful parsley leaves

  • 1 tsp for water for mussels

  • 4 Tbsp Olive oil EVO

  • 1 lemon slice

  • 1.5 cup rice/ cup is 200 ml

  • broth 3:1 rice 4.5 cups of broth /200 ml/cup

  • 100 g Parmesan cheese

  • salt and pepper to taste, control it.

Preparation:
  1. Wash seashells in cold water. Put in the deep pot a water, add 1 tsp. Salt and wait for it to boil, then put the mussels in boiling water to mussels open.

  2. Take out the mussels one by one, carefully shake all the meat from the mussels on a plate.

  3. Put 2 tbsp. Olive oil in a pan and fry the mussels, add 30 g of butter and 2 crushed garlic.

  4. (then throw it), squeeze a little lemon juice and simmer a little 70 ml white wine for 5 minutes until the alcohol evaporates and put out the fire.

  5. Put 2 tablespoons of olive oil in a special pot and put finely chopped onion, add 1,5 cups of rice, salt and pepper, add broth 3: 1.

  6. When the rice becomes soft, 5 minutes before add the mussels with the topping and with a lot of chopped primrose leaves,

  7. Mix it all and serve warm.

  8. Sprinkle with Parmesan when you're done, you can also use lemon if you like

NOTE: When you make risotto, make sure there is always a little liquid and that the rice is not dry! If you like, you can also use cherry tomatoes with risotto.
