Ratatouille Grilled Vegetables

  • Perfectly prepared vegetables in this french way, are quick and easy to prepare, and very tasty. Follow recipe.

Ingredients: simple, total time: 55 min, 2 servings
  • 2 medium zucchini

  • 1 large blue eggplant

  • 6 tomatoes

  • 5 Tablespoons of ketchup

  • 1 clove of garlic

  • 1 onion

  • 1 red

  • 1 green pepper

  • spices, salt, pepper, oil

Preparation:
  1. Wash eggplant and cut into thin slices. Leave them soaked in saltwater for 30 min., to get the bitterness out.

  2. Wash zucchini and cut into thin slices.

  3. Do a similar procedure with tomatoes.

  4. Prepare the tomato sauce: finely chop the onion, paprika (diced), and previously peeled tomato. The peel is easily removed if you pour boiling water over the tomatoes.

  5. Sauté onion in oil. Add paprika, garlic and tomato, and salt. When it boils, let it simmer for another 5 minutes. Add ketchup, stir and bring to a boil again. Pour the prepared tomato sauce on the bottom of the fireproof dish (or pan).

  6. Arrange the vegetables carefully. Arrange to be colorful. Add salt, spices, and preferably one of the aromatic herbs, which will add a perfect taste to this dish: basil, mint, rosemary, or thyme. Spray with oil. Cover (you can with aluminum foil) and bake in a preheated oven at 180 °C for 20–30 minutes.

  7. At the end of baking, you can remove the foil and sprinkle it with grated hard cheese.

  8. You can also serve ratatouille with meat garnish. Buon appetito!
