Pumpkin Soup

  • Now is the time for pumpkins and should be used for a healthy diet. Today I cooked a wonderful pumpkin and apple soup, it is very healthy and tasty, the preparation is simple and quick. Follow recipe.

Ingredients: simple, total time: 60 min. 4 serving
  • 500 g pumpkin/ cleaned

  • 1 apple/ granny smith/ peeled and cleaned

  • 1 small onion/ finely chopped

  • 2 cloves of garlic

  • 2 Tbsp of olive oil EVO

  • salt and pepper to taste

  • ground nutmeg to taste

  • water as needed

For Serve:

  • toasted pumpkin seeds to taste

  • chopped parsley to taste

Preparation:
  1. Cut the pumpkin into pieces, remove the seeds, and place on a baking sheet lined with paper.

  2. Then put a chopped apple cut in half, a sliced ​​onion and cloves of garlic.

  3. Drizzle with olive oil, cover with aluminum foil and place in an oven heated to 200 °C.

  4. Bake for 40 minutes, until the pumpkin flesh is soft.

  5. Take out the pumpkin meat with a spoon, then blend it together with the apple, black onion and garlic into a cream.

  6. Add the mixture to the pan, add water to get the desired consistency.

  7. From the spices, add salt, nutmeg, and pepper.

  8. Heat on moderate heat, when it boils, cook for another 5-7 minutes.

  9. Serve the warm soup with toasted pumpkin seeds and chopped parsley.
