Pumpkin pie with Raisins

  • Homemade pumpkin pie with raisins, juicy and soft with the finished rind. It is quick to prepare and very easy to process, I believe you will like my recipe. Follow the recipe.

Ingredients: simple, total time: 45 min.
  • 1 kg pumpkin/ grated

  • 500 g thin crust/ 12 sheets

  • 15 Tbsp sugar

Spray:

  • 100 ml oil

  • 100 ml mineral water

  • 1/2 tsp baking powder

and:

  • 60-70 g raisins/ bath in warm water

  • powdered sugar for sprinkle

  • cinnamon as you like/ optional

Preparation:
  1. Mix oil, sour water and baking powder in a cup.

  2. Grate the pumpkin, add the sugar. Stir and let stand for 15 min. (If you want, you can add a teaspoon of cinnamon and mix.)

  3. Then divide the crust into 4 parts.

  4. Turn on the oven to preheat to 180 °C.

  5. Coat the baking tray with oil. Take the first crust, brush with spray. Sprinkle the crust with little sugar, then arrange the second crust, repeat the procedure. Put the third crust, sprinkle with spray, add 1/4 amount of pumpkin filling at the bark lengthwise, together with the juice, sprinkle with raisins, flatten and wrap the pie.

  6. Consume all material with same procedure.

  7. Brush the top of the crust that you wrapped, with spray and little oil.

  8. Put the pie to bake at 180 °C, 15 min. finally strengthen to 200 °C for 5 minutes to get a crispy crust.

  9. The pie is ready when the crust is crispy and the filling is melted, and the pie has taken on a nice yellow color.

  10. When the pie is done, leave it to cool a bit, then sprinkle with powdered sugar.

NOTE:

  • You can also use cinnamon if you like over the filling. Cover with a semi-damp kitchen towel for easier cutting and to prevent the crust from spilling! If you prefer more soft pies, then spray with water immediately when the pie is done!

  • Instead of raisins, you can add dried cranberries.

  • Keep the pumpkin pie covered in a dry place for up to 5 days.
