Preparation:
  1. Wash the beans well and drain, pour water into a large saucepan.

  2. Leave the beans to cook for about 30 minutes. After 30 minutes, drain the water and add new water, pour 3-4 fingers more over the beans.

  3. Add 3 spoons of oil, bay leaf and peppercorns, cook the beans until soft.

  4. The beans must not fall apart. Do not throw away the liquid from the cooked beans, you will need it later.

  5. In the meantime, fry the chopped leek and onion in oil. Sauté the onion for about 20-30 minutes, stirring occasionally, until soft.

  6. Add salt, hot and regular ground peppers to the onion.

  7. Strain the beans, do not discard the liquid!

  8. In a crock pot, place the cooked beans on the bottom (the beans must remain whole) and sauté the onion mixture over the beans, then the beans again, then the onion mixture, until the ingredients are used up, finishing with the beans on top.

  9. Pour the liquid from the cooked beans, then pour a little oil over it, mix the ingredients gently, not too much.

  10. Check the taste, add spices as needed.

  11. Add complete hot green peppers on top.

  12. Bake in a preheated oven at 200 °C for about 30-35 minutes.

  13. There should be a little broth left because the beans should not be completely dry.

  14. If necessary, add the remaining liquid to the beans during cooking.

  15. Serve warm.

Buon appetito!
