Potato salad is excellent as an addition to fish specialties and seafood, at the same time healthy and tasty. For this you only need a few ingredients: potatoes, olive oil, salt, pepper, red onion and parsley. It's quick and easy to make. Follow recipe.
Ingredients: simple, total time: 45 min. 3-4 serving
5 medium potatoes
1 red onion
1 Tbsp fresh parsley/ finely chopped
salt and pepper to taste
Olive oil EVO to taste
Preparation:
Wash the potatoes well and soak them in a pot of water with the skin on, add 1 teaspoon of salt. Cook for 30 minutes, then strain and leave in a cool place to cool well for about 30 minutes.
In the meantime, prepare a deep salad bowl.
Cut the red onion into strips and a little parsley into small pieces.
Pour a little olive oil into a deep bowl.
Peel the potatoes and clean them of any dirt. Cut into rings and arrange in a salad bowl.
Season with salt and pepper and pour over a little oil.
Continue to arrange the potatoes in this way and add the spices, finally add the chopped red onion and mix, sprinkle with parsley.
Serve with slices of lemon and fish specialty.

You can add 1 spoon of vinegar to this amount.
Keep the salad in the refrigerator for up to 4 days.
