A wonderful and healthy salad that fantastically accompanies fried fish specialties, fried steaks, as well as other grilled meat. It is easy to prepare and ready quickly. Follow recipe.
Ingredients: simple, total time: 35 min. 2 serving
4 medium potatoes/boiled, cut into rings
1 red onion/ cut into ribs
1 handful sweetcorn/ from can-well strained
1-2 Tablespoon Greek yogurt/ or sour cream
50 ml olive oil EVO
30 ml of wild apple cider vinegar
1 Tablespoon fresh parsley leaves
1/2 teaspoon red-hot crushed pepper
salt and black pepper to taste
Preparation:
Potatoes wash well.
With the shell, put them in water to boil for about 22-23 minutes.
Discard the water and leave the potatoes to cool completely, peel them, then cut into rings 5-6 mm thick.
Put them in a deep salad bowl, then add salt, black pepper to taste, olive oil, crushed pepper, sweet corn, yogurt and lastly sliced onion to the ribs.
Pour vinegar and mix everything lightly with a spoon and fork.
Garnish with chopped parsley.
Serve.

Keep the salad in the fridge for up to 2 days.
