Potato Salad

  • A wonderful and healthy salad that fantastically accompanies fried fish specialties, fried steaks, as well as other grilled meat. It is easy to prepare and ready quickly. Follow recipe.

Ingredients: simple, total time: 35 min. 2 serving
  • 4 medium potatoes/boiled, cut into rings

  • 1 red onion/ cut into ribs

  • 1 handful sweetcorn/ from can-well strained

  • 1-2 Tablespoon Greek yogurt/ or sour cream

  • 50 ml olive oil EVO

  • 30 ml of wild apple cider vinegar

  • 1 Tablespoon fresh parsley leaves

  • 1/2 teaspoon red-hot crushed pepper

  • salt and black pepper to taste

Preparation:
  1. Potatoes wash well.

  2. With the shell, put them in water to boil for about 22-23 minutes.

  3. Discard the water and leave the potatoes to cool completely, peel them, then cut into rings 5-6 mm thick.

  4. Put them in a deep salad bowl, then add salt, black pepper to taste, olive oil, crushed pepper, sweet corn, yogurt and lastly sliced ​​onion to the ribs.

  5. Pour vinegar and mix everything lightly with a spoon and fork.

  6. Garnish with chopped parsley.

  7. Serve.
