Pork Crackling Biscuits

  • A wonderful Serbian appetizer made of Greaves salted biscuits, they are a great snack for breakfast or snacks, the shapes can be smaller or larger, you decide for yourself. The dough is perfect and delicious. Follow recipe.

Ingredients: simple, total time: 90 min.
  • 500 g flour + 50 g for work surface

  • 10 g dry yeast

  • 2 tsp salt

  • 250 ml lukewarm milk

  • 70 g butter

  • 2 egg yolks

  • 300 g crackles

  • 80 g flour

  • 1. 5 tsp black pepper

Preparation:
  1. In a deep bowl, add flour. 1 bag of dry yeast, salt, lukewarm milk, room temperature butter cut into cubes, and 2 egg yolks. Mix it all well and make a smooth dough.

  2. When you have the desired dough, let it sit in a warm place for 1 hour.

  3. During that time, grind cracklings, mix with flour add a spoonful of pepper.

  4. Take out the dough after the elapsed time, sprinkle it with a little flour, spread it with a rolling pin to 1 cm, spread the crackers in the middle of the dough.

  5. Fold the dough like a book and spread it again with a rolling pin to the same thickness. Fold again like a book and spread the dough to 1.5 cm. (Three times you need to make a fold like a book and separate the dough.)

  6. Take a round, smaller mold (brandy cup).

  7. Take out the molds and arrange them on the baking paper.

  8. Make a circle again with the rest of the dough, spread it out and take out the molds.

  9. Whip the rest of the egg whites by hand briefly.

  10. Coat the tops with the help of a brush.

  11. Bake at 180 °C for about 20-25 minutes.

  12. Serve warm or cold.
