A wonderful Italian-Mediterranean meal, creamy structure of salmon with addition of tomato concentrate and cooked cream. This delicious meal, you can make it for lunch or dinner. It is easy to prepare and ready in just 15 minutes. Follow recipe.
Ingredients: simple, total time: 15 min. 2 serving
220 g pasta/ rigatoni, macaroni, penne, tagliatelle
2-3 Tbsp Olive oil EVO
1/2 onion / or spring onion finely chopped
1 clove of garlic/ minced
30 g tomato concentrate
200 ml cooking cream
120 ml liquid of pasta/ or water
100 gr smoked salmon/ chopped as you like
fresh parsley or celery leaves/ finely chopped
salt and pepper to taste
1/4 grated lemon peel
grated Parmesan/cheese for sprinkle
Preparation:
Prepare all the ingredients as described above.
Prepare the dough, first put a pot with water and add salt and olive oil. Wait for it to boil. Pour pasta as desired, and cook according to the instructions alla dente.
During that time finely chop the onion fry in a little oil for about 2 minutes, until softened.
Add the tomato concentrate, garlic, simmer about 3 minutes stir well all ingredients.
Then add cooking cream, stir and reduce heat.
In the meantime add a little water, cook for about 5-6 minutes, with occasional stirring. Turn off the heat briefly.
Strain the finished pasta well and set aside.
Turn on low heat again pan with the sauce, cook until it warms up.
Add chopped: parsley, salmon, salt, pepper to taste, and grated lemon peel. Stir well and cook for the next 2-3 minutes on low heat.
Finely add pasta, stir for about a minute.
Serve warm, sprinkle with pinch of Parmesan cheese.
