Old Bean Soup Recipe

  • Indispensable on the table in the winter months, beans are one of the favorite dishes of many generations. It is prepared simply, and there is no person who does not know how to prepare it. This is a proven, family recipe. Follow recipe.

Ingredients: simple, total time: 120 min. 5–6 servings
  • 500 g of beans

  • 400 g of dry ribs/cut into pieces

  • 100 g of dry bacon/diced

  • 2 heads of onion/finely chopped

  • 2 cloves of garlic/finely chopped

  • 2 carrots/finely chopped

  • salt, pepper to taste

  • 3 teaspoons of ground paprika

  • 2 Tablespoon of fat

  • 1 full Tablespoon of flour/optional

  • dry spice/Vegeta

Preparation:
  1. Leave the beans to stand in the water overnight. In the morning, rinse it well and add new water to boil the beans in a deeper pot. After boiling the beans, cook for another 10 minutes and discard the water and rinse the beans well.

  2. Pour in new water to cook the beans again on low heat. There should be about 1.8-2 liters of water.

  3. When the beans started to boil, during this time, in a deeper pan sauté the bacon in the fat until it becomes transparent. Add the finely chopped onions, fry for about a minute, add the chopped garlic cloves and the carrots. Add 1 teaspoon of dry spice/Vegeta and ribs, mix well. At the end, add the ground peppers and let it simmer for about 2–3 minutes until the peppers are combined in the fat, add a little water as you need.

  4. After that, add to the boiled beans, cook for the another 1h and 30 min, until the beans are soft. After cooking for 1 hour, add salt and pepper to taste. Leave the pot uncovered on a slightly moderate heat. If you want, add 1 full tablespoon of flour mixed with a little water 40 minutes before the end of cooking. Serve warm in deep plates with bread or pasta.
