Muffins with cornmeal and yogurt is a healthy meal that is prepared very quickly. It is ideal for breakfast and dinner. All ingredients are combined in one bowl and then poured into muffin tins. Follow the recipe.
Ingredientis: cup measure 200 ml, simple, total time: 45 min.
3 eggs/ scrambled
200 g fresh cow cheese soft/or crumble, feta cheese crushed
1 teaspoon salt
1 cup of yogurt
1 cup corn meal
1 cup of wheat flour
1/2 cup of olive oil
3-4 Tablespoons of mature cream
1 bag baking powder/10 g
sesame, cumin/ for sprinkle/ optional
Tin for muffins
oil for spread
Preparation:
Mix the eggs in a deep bowl, add salt, cheese and yogurt, mix everything with a mixer on low speed into a uniform mixture.
Then add corn flour, wheat flour, baking powder and mature cream. Mix again with mixer on slow speed, until uniform.
Take a muffin tin and coat them with oil with the help of a brush.
With the help of a spoon or a small ladle, pour the mixture into the molds almost to the top. You can sprinkle them with sesame or cumin if you want, it's optional.
Heat the oven to 180 °C, after 10 minutes put your muffins to bake for about 25-30 minutes.
After that, let them cool down a bit and serve with yogurt or kefir.
This is an excellent and healthy appetizer for breakfast or dinner.
