Mini Pancakes bites
Mini pancakes are great because that way you can spread the dessert over 2-3 days. Very little consumption of materials and it is an economical recipe. They are very tasty, foamy, and soft. You can serve them with honey, maple syrup, jam, or powdered sugar. Follow the recipe.
Ingredients: simple, total time: 30 min.
2 eggs
40 g sugar
60 ml oil
1 lemon peel grated/ optional
450 ml milk
250 g flour
1/2 bag baking powder
Non stick pan
Little oil for frying
Preparation:
Beat the eggs, then add the sugar and mix until fluffy.
Add the oil and milk to the mixture and mix well.
Add the flour, mixed with the baking powder, to combine the ingredients.
Heat a little oil in a non-stick pan to moderate heat.
Collect excess oil.
Using a small ladle for sauce, scoop up a little of the mixture. Place it on the pan and gently pour the mixture in center one spot, do not spread the dough, leave it in the same position, let the pancake spread itself.
Bake about 3-4 minutes until golden brown, then turn to the other side and fry for the same amount of time.
Pour 2 drops of oil at each place and spread it on the pan.
Put the pancakes on a plate.
Serve warm mini pancakes with jam, powdered sugar, honey, or maple syrup.

NOTE:
If you have a metal round mold measuring 10-12 cm, you can use it for this baking to give them the right shape.
From this amount, you will have about 35 pieces if you need to increase the ingredients more.
You can keep the rest of the dough mixture covered in the refrigerator for 2 days.
Before preparing, always mix the dough once more.
