Mini Chickpea Flour Muffins

Ingredients: very easy, total time 45 min. 12 muffins
  • 1 and 3/4 cups chickpea flour

  • 1/4 cup nutritional yeast/ optional

  • 1 tsp baking powder

  • 1 tsp garlic powder

  • 1 tsp dried basil

  • 3/4 tsp mineral salt or black salt

  • 2 cups water

  • 1 cup corn frozen, fresh/ or canned

  • 1 large red bell pepper (1 cup)/ finely diced

  • 1 jalapeño, finely diced

  • 1/4 red onion or medium shallot/ finely diced

  • handful of baby kale or spinach/ roughly chopped

  • chives/ to garnish (optional)

Preparation:
  1. Turn the oven to 190 °C.

  2. If you don't have a non-stick muffin tin, lightly grease it with oil.

  3. In a deep mixing bowl, mix the chickpea flour, optional nutritional yeast, baking powder, salt, garlic powder and basil.

  4. Whisk in water (the dough will be lukewarm, but this is normal).

  5. Add corn, paprika, jalapeño, garlic and baby greens, stir until well combined.

  6. Using a measuring cup, pour the dough into the muffin tin, filling all 12 holes.

  7. Sprinkle the chives on top.

  8. Place in the oven on a central rack and bake for 35 minutes.

  9. Do the test with a toothpick, stick it to the center of the muffin and if the dough doesn't stick, it means it's done.

  10. If you cook for 35 minutes, and it seems that the center is wet, leave them to cool, and they will tighten nicely.

  11. Remove from the oven, turn the fritters and place on a wire rack to cool.

  12. Leftovers can be stored, covered, in the refrigerator or on the counter.

  13. Reheat in the toaster oven or microwave.
