Military Beans

  • One of the mythical dishes in Yugoslavia was and remains military beans. Preserved in the memories of those who served military service in the JNA. This famous recipe and the name “military” is precisely because in the original recipe no meat is added. But if possible, you can add it if you want: dried or fresh, sausages, bacon, dried bones from smoked prosciutto or pig's feet. Follow recipe.

Ingredients: medium, total time: 3h.
  • 500 g of beans

  • 1 large (red) onion/finely chopped

  • 3 cloves of garlic/finely chopped

  • 1 large carrot/cut into small or smaller cubes

  • 100 g of fat or oil

  • salt, pepper to taste

  • 1 Tablespoon of ground red pepper

  • 1 Tablespoon of dry herb seasoning/Vegeta

  • 2 bay leaves

  • 1 dry pepper soaked in water for 2 hours with laurel

  • 1 Tbsp of fresh parsley leaf/finely chopped

  • 2 roasted hot pepper as addition/ as you like/ optional

Preparation:
  1. Soak the selected beans in cold water, taking care to ensure that there is enough water so that the beans do not absorb the entire amount of water during swelling and remain dry.

  2. Keep the soaked beans in a cool place and let them soak for 1–3 hours.

  3. Then drain the water in which the beans were soaked. Put the beans in a suitable container, pour cold water so that they are soaked and cook 30 minutes. After which the water should be drained and then poured with hot water so that it becomes saturated, add half of finely chopped onion and let it cook with occasional addition of hot water.

  4. In half of the hot fat, add the rest of the finely chopped onion and carrot, cut into smaller cubes or grated, and fry everything together until it turns slightly brown.

  5. When the beans are half cooked, add fried onions and carrots, dried peppers, previously soaked in cold water for 2 hours, and a bay leaf.

  6. Heat the remaining fat, add flour and fry until lightly browned. When the flour turns brown, turn off the heat and immediately add the pounded and finely chopped garlic and paprika powder and mix it all well.

  7. When the beans are soft, add salt, and pepper and pour the prepared spray into the beans, stirring constantly so that the spray does not clump. Boil the beans with a splash for another 20–30 minutes, after which the heat should be turned off. Taste and, if necessary, add seasoning and finally chopped fresh parsley leaf. Serve warm. NOTE: It is important to know that the beans should not be mixed when cooking until they are browned, in order not to break the beans and burn them. Beans can be served as an independent dish or as a side dish with stuffed steaks, meatballs, stewed beef, boiled dry pork, pasta, or potatoes.
