Matavilz Salad with Fennel and Eggs

  • A healthy and simple light salad, ideal for dinner or lunch as a side dish. Very tasty with few ingredients. Follow the recipe.

Ingredients: simple, total time: 15 min.
  • 2 hard-boiled eggs

  • 2 handful Matavilz salad/washed

  • 1 /2 fennel root/ cut into ribs

  • Olive oil EVO

  • 1 tap vinegar

  • salt to taste

Preparation:
  1. Take two handfuls of matavilz salad, wash under running water and leave in a colander.

  2. Add two eggs to a small pan, cover with water, cook for 10-11 minutes on moderate heat.

  3. In a salad bowl, add strained matavilz salad.

  4. Wash the fennel and cut it in half. Wrap half in transparent foil and leave for next time.

  5. Cut the other half into thin ribs and add to the bowl with the salad.

  6. Drizzle with olive oil and add a little vinegar.

  7. Peel the hard-boiled eggs and cut them into slices, add a little salt over them, mix everything gently.

  8. To serve.
