Mascarpone and orange fluffy pancakes are very easy to prepare and so delicious and juicy you can combine them with honey, jam, or Nutella or chocolate glaze. Follow recipe.
Ingredients: 30 fritters, very easy, total time: 15 min.
250 g of flour 00
2 medium eggs
90 g of granulated sugar
250 g of mascarpone
50-60 ml of fresh orange juice
8 g of baking powder
grated peel of an orange
peanut oil for frying
Preparation:
Add eggs, granulated sugar and grated orange peel to the bowl.
Mix with a hand whisk.
Add mascarpone, orange juice, and finally 00 flour mixed with baking powder.
Stir until you get a homogeneous mixture, not too liquid, but not too hard
When the dough is ready, let it rest at room temperature while the oil heats up.
Add the peanut oil to a small pot with high sides and a thick bottom
When the oil is hot, take the dough with two slightly oiled teaspoons and put it in the oil to fry.
Fry 4–5 pieces of fritters at a time.
The oil must not be too hot, otherwise it will burn immediately and will not cook well inside
When they are golden, pour them on absorbent paper.
Put each fritters in granulated sugar, put them on a nice serving dish and serve hot.
