Marquisa Cake

  • Marquisa cake is a favorite dessert in Serbia, not only because of its taste, but also because of the ease with which it is prepared. It is very simple to prepare and is ready quickly. For this cake, you will need high-quality dark chocolate, eggs, whipped cream, store-bought cookies and a little flavoring, and of course you will. Follow recipe.

Ingredients: mold 22 cm, simple, total time: 60 min.

For Dipping Biscuits:

  • 2-3 packs of Ladyfingers Savoyardi

  • 200 ml of milk

  • 1 ampulla of vanilla extract / or rum liqueur

Filling:

  • 150 g of butter/ room temperature

  • 130 g of granulated sugar

  • 6 eggs/ separated

  • 150 g dark chocolate/ on cubes

  • 2 bags of vanilla sugar 20 g

  • pinch of salt

Glaze:

  • 200 ml whipped cream

  • 150 ml milk

or

  • Chocolate Ganache /150 ml sweet cream + 100 ml chocolate

  • hazelnuts

Preparation:
  1. First, separate the yolk from the white.

  2. Pour two cups of water into a small pot and wait for it to boil.

  3. During this time, make the filling.

  4. Beat the egg yolks with 70 g of sugar and vanilla sugar, until foamy and until the mixture becomes lighter.

  5. Transfer the bowl to steam, stir until the sugar is absorbed and thickened.

  6. After that, add the chocolate, stir until the mixture is uniform.

  7. Pour the finished cream into a bowl and let it cool, stirring occasionally.

  8. Now beat the egg white with a pinch of salt until foamy, then gradually add 60 g of sugar and make a stiff snow.

  9. When the chocolate cream has cooled, add butter and mix with a mixer on medium speed. Stir with a spatula after mixing 5 minutes.

  10. Gradually add the beaten egg whites to the chocolate cream, stir with spatula with using the bottom-up technique.

  11. The mixture must be uniform and smooth. Set aside.

  12. Pour the milk into a small bowl and add the flavoring of your choice, vanilla, or rum.

  13. Dip the biscuits for a short time in a part where no sugar, then arrange them in a circle round mold next to each other.

  14. After that, arrange the dipped biscuits on the bottom of the dish. Cut the cookies to fit the mold.

  15. When you're done, pour the cream over it and smooth it out.

  16. Leave a cake in refrigerator overnight.

  17. After that, make a decoration as desired, either with whipped cream or chocolate ganache with hazelnuts. Leave a cake another 1 hour to cool.

  • You can also use a larger mold, you will need more biscuits
