Ingredients: simple, total time: 40 min.
160 g butter
6 eggs/ separated yolks and whites
240 g sugar
200 g of sharp flour
strawberry or apricot jam
walnuts for sprinkle
1 vanilla sugar/ 10 g
Preparation:
160 gr. Whisk the butter well, then add 6 egg yolks whipped with 180 g sugar and stir well.
When you have mixed well, pour in 200 g of flour, mix everything well again.
Spread a 45 × 30 cm baking tray with butter and flour, pour the dough into the tray to be a finger thick. Bake at 180 °C, 10 min.
When the dough is half-baked, take it out to cool, spread it with apricot or strawberry jam. Flatten with spatula.
Then whisk the solid egg whites, gradually add the sugar with a spoon (6 tablespoons in total).
When it is well kneaded and firm, spread it on the dough and bake it again for about 10 minutes at 180 °C. The white cream must not be too hard, and too much brown.
Then take the chopped almonds and walnuts with vanilla sugar, mix in a plate.
When the cake is ready, sprinkle on the filling 2-3 mm to be.
When cutting the cubes, be sure to work with a knife dipped in water, so that the cubes do not fall apart. And leave to cool.
2. London Bars Recipe
Ingredients:
140 g of butter, softened at room temperature
80 g of sugar
1 egg
lemon juice and zest
245 g of flour
10 g of baking powder
4 egg whites
200 g of powdered sugar
150 g of ground walnuts
5–6 tablespoons of apricot jam
about 50 g of chopped walnuts
Preparation:
Oil and flour a 24 cm baking sheet.
Beat butter and sugar until creamy.
Add egg, juice, and lemon peel and mix everything well.
In another bowl, mix the flour and baking powder.
Gradually add flour to the butter mixture. Mix with your hands only until everything is well combined and mixed. The dough will be sticky and shapeless, but don't add more flour, that's how it should be.
Heat the oven (with a fan) to 180 °C. If the oven is without a fan, then to 200 C.
Dip a spoon in water and with the back of a wet spoon spread the dough into the prepared pan.
Bake in a preheated oven for about 7–8 minutes.
In the meantime, whip the egg whites into stiff peaks.
Gradually add powdered sugar.
Gradually add ground walnuts.
Remove the tray from the oven, but do not turn off the oven.
Spread the apricot jam over the dough and then spread the egg white snow over it.
Sprinkle with chopped walnuts.
Bake for another 15–18 minutes.
Cool the cake completely before cutting.
