A fragrant and soft yogurt cake, or donut cake, it's very easy to prepare. It's ideal for the Christmas and New Year holidays. You can also prepare it on ordinary days. I always make this cake in the original, that is, the simplest, because I can combine it with different flavors of strawberry jam, apricot and raspberry, you can also combine it with vanilla cream or if you like Nutella chocolate. The wonderful soft dough will delight you, it is ideal for snacks and breakfast or dinner. Follow recipe.
Ingredients: round mold 24 or 25 cm, very easy, total time: 35 min, 8 persons
250 g flour 00
12 g baking powder/1 sachet
1 lemon zest
3 eggs
150 g of sugar
pinch of salt
125 g cup of vanilla pudding
100 ml yogurt
100 ml of oil
70 ml lemon juice
powdered sugar for sprinkle cake
little butter and flour for greasing mold
Preparation:
Mix flour and baking powder in a deep bowl and add lemon zest and set aside with stirring.
In a deep glass bowl, put eggs, sugar and a little salt, mix at maximum speed until the mixture becomes thicker and foamy.
Then add oil and stir constantly, then add vanilla pudding, yogurt, mix further.
Then gradually add the flour mixed with baking powder and mix with a hand whisk.
When the mixture has become compact, add lemon juice at the end, mix well once more.
Pour all this into a well-greased and floured round mold, 24 or 25 cm.
Bake in preheated oven with fan on, 180 °C, 25 minutes.
When the cake is done, leave it to cool 10 min. Use a knife to separate the dough from the edge, turn the cake over and sprinkle with powdered sugar. Serve.

NOTE:
You can make this cake in either chrome shape if you have a rectangle for rolls or bread measuring 35 cm x15, it is important that the depth is appropriate.
If you want, you can decorate this cake with milk or white chocolate, or make a lemon topping with 200 g of powdered sugar and 1 lemon juice.
