Dough:
120 g butter
200 g granulated sugar
2 eggs/ at room temp.
1 large lemon peel / or 2 small
1/4 cup lemon juice
1/2 teaspoon baking soda
125 g flour
1/4 teaspoon salt
1 teaspoon vanilla extract
For the Glaze:
115 g soft cream cheese Philadelphia/ or Mascarpone
300 g confectioner's sugar
2-3 Tablespoons lemon juice
1 teaspoon lemon peel grated
Preparation:
Preheat the oven to 180 °C.
Line an 20 × 20 cm baking pan with baking paper, lightly grease with butter.
In a bowl, combine the flour with the lemon peel and salt, stir well.
Beat the butter, sugar, and vanilla extract until fluffy.
Add the eggs one at a time until incorporated.
Add the lemon juice and baking soda and beat until incorporated.
The mixture will curdle.
Add the flour mixture in a few times while beating on low speed.
Spread the batter into the prepared pan.
Bake on the middle rack for 25–27 minutes.
The brownies should be set but very moist. Cool completely.
Combine the glaze ingredients in a bowl, whisk together until smooth. If the glaze is a glue-like texture, add more confectioner's sugar, about 100 g and whisk together.
Spread the icing over the brownie and serve. Cool cake, then serve. Buon appetito!
