Lamington Cake

  • A cake that is easy to make and very tasty and soft. A real delicacy for the younger and older population. It is very spicy, so be careful about the amount you consume. An economical cake that everyone loves to make and enjoy in bites. Here are three of my nice recipes, I believe you will be very satisfied. Whichever of these recipes you choose, you won't go wrong. Ingredients: simple, total time: 70 min.

Dough:

  • 3 eggs

  • 10 Tablespoons of crystal sugar /or 220 g

  • 13 Tablespoons of oil /or 180 ml

  • 16 Tablespoons of flour /or 300 g

  • 100 ml of milk

  • 1 baking powder/10 g

Cream:

  • 250 g of margarine

  • 100 g of cooking chocolate

  • 1 large spoonful of rum

  • 200 ml of milk

  • a glass of 200 ml of crystal sugar

and:

  • 300 g of coarsely ground coconut

Preparation:
  • First, prepare a biscuit from the listed ingredients.

Biscuit:

  1. Place the egg whites in the mixing bowl, and separate the yolks into one glass. Mix egg whites with sugar until stiff, then add and mix in order: oil, 6 tablespoons of flour and baking powder, one egg yolk at a time, then gradually add milk and the remaining flour.

  2. Pour into a medium-sized tray (approx. 25×35 cm) in which we have placed baking paper (for easier removal of the cubes).

  3. Bake at 180 °C until the biscuit begins to separate from the sides of the pan.

Cream:

  1. Cook the punch cream by first putting melted margarine and chocolate, when it's melted, add sugar, then milk and finally rum. When the cream boils, remove it from the heat.

  2. Cut the biscuit into cubes, dip each one in warm cream and roll in coconut flour.

  3. Wait for it to cool a little, then roll them in coconut, arrange them on a larger and decorative tray. Chill them before serving.


2. Recipe Lamington Cake
Ingredients:

Biscuit:

  • 5 eggs

  • 15 Tablespoons of sugar

  • 15 Tablespoons of oil

  • 15 Tablespoons of milk

  • 1 teaspoon of baking powder/5 g

  • 15 Tablespoons of flour


Chocolate Filling:

  • 220 g of margarine

  • 100 g of sugar

  • 150 ml of milk

  • 150 g of chocolate

For Spreading:

  • 150 g of coconut flour

Preparation:
  1. Turn on the oven to 220 °C.

  2. Grease the pan with oil and flour it.

  3. Beat the eggs until frothy with a mixer:

  4. First, beat the egg whites with sugar, add the egg yolk, oil, and milk.

  5. After adding flour and baking powder, beat the mass by spoon.

  6. Pour into a greased pan, bake for 15 min, reduce the temperature to 200 °C, and another 10 min, approximately when the edges of the biscuits are slightly shriveled.

  7. While the biscuit is baking, prepare the chocolate filling by placing all the ingredients in a bowl and heating them slightly to combine.

  8. Cut the still warm biscuit into cubes.

  9. Dip the cubes in hot chocolate, wait a few minutes and roll them in coconut flour. You do this with the help of a spoon or fork.

  10. Leave the cakes to cool and then serve.

3. Recipe Lamington Cake
Ingredients:

Biscuit:

  • 100 g of 00 flour

  • 100 g of potato starch

  • 200 g of sugar

  • 6 eggs

  • 1 sachet of baking powder/ 10 g

  • 2 Tablespoons water (boiling)

For the Chocolate Glaze:

  • 400 g of dark chocolate

  • 300 ml of milk

  • 50 ml of cream for desserts

To Cover:

  • 200 g of coconut flour

Preparation:
  • The procedure for making this cake is the same as for the first two recipes, the biscuit is baked at 180 °C for about 30–35 minutes. You will use steam in a bain-marie to make the glaze.

NOTE: If you want the edges of the cube to be covered, then put 3 pieces of them in a plate and dredge the cookies in coconut flour.
