Khichdi or Khichri is a dish in South Asian cuisine made from rice and lentils, but other variations include bajra and mung dal khichri. In Indian culture, in several regions, especially in the northern areas, it is considered one of the first solid foods eaten by babies. Follow recipe.
Ingredients: simple, total time: 4 servings
4 Tablespoons of vegetable oil or purified butter, so-called GI butter
1/4 teaspoon asafoetida
1 teaspoon cumin
ginger crust 2-3 cm long or 1 teaspoon of ginger powder
2 grains of cardamom
2 cloves of garlic
1/2 teaspoon turmeric
1 cup mung beans / you can also replace it with lentils
1/2 cup oblong rice
5 glasses of water
Preparation:
Heat the oil in a thick-bottomed pan with the addition of asafoetida and cumin. When the cumin releases its aroma, add the cleaned and grated ginger and fry everything well. Ginger should be slightly browned.
Then add cardamom, whole garlic cloves and turmeric. Keep on the stove for 1 minute, stirring.
Add half-cooked beans or lentils with spices, water, rice, salt and bring to a boil. Turn off the heat, cover the pan and simmer for the next 30 minutes, until done. Stir from time to time. Serve. Buon appetito!
