Juicy Fried Eggplants

  • Wonderful fried Eggplants that can be a substitute for meat, a very simple recipe and ready quickly. You can fry these eggplants with or without crumbs. I did not put them in this recipe. You will love these. Follow recipe.

Ingredients: simple, total time: 40 min. 14 pieces
  • 2 eggplants/sliced 5 mm by length

  • salt to taste

  • black pepper to taste/ optional

  • 50 g of flour

  • 3 eggs

  • 100 ml of oil for frying

  • breadcrumbs/ as you like optional

  • fresh finely chopped parsley/ as you like

Preparation:
  1. Wash the eggplant well and remove the upper stem. Now, I never remove the skin from the eggplant because it is full of vitamins. And you can peel them from the skin and cut them to a thickness of 4-5 mm. Arrange them in a large plate or on a tray and sprinkle with salt well on both sides of the eggplant.

  2. Let it stand for 30 minutes.

  3. After the specified time, pour the oil into a large pan and heat it over moderate heat. Beat the eggs and add a little salt and pepper if you like. Gently squeeze the eggplant with your hands so that the liquid comes out, and roll it in flour, then in beaten eggs. Place on hot oil to fry until lightly browned on both sides. Place them on a plate lined with kitchen paper to absorb all the fat. Repeat this until you have used up all the material.

  4. Serve warm with any spread you like, maybe ajvar, mayonnaise, cream, and some other side dish on a plate with salad. Sprinkle on top a few chopped parsley. Buon appetito!
