Grandma's recipe for Pancakes
  • This is an old recipe that my grandmother used and how to make pancakes the old way in Serbia. Fine, soft and juicy and easy to prepare, they are ideal for breakfast, dessert, or snack. Ingredients: simple, total time: 40 min.
  • 3 eggs

  • 1 teaspoon sugar

  • 1 peel off lemon/ grated

  • pinch of salt

  • 200 g smooth flour 00

  • 500 ml milk

  • 1 Tbsp Olive oil EVO/ or melted butter

  • Oil for frying

  • Tefflon pan

  • Mixer or hand whisk

Preparation:
  1. In a deep bowl, add eggs, sugar, and a pinch of salt, then beat with a mixer at medium speed.

  2. Add milk and gradually flour mix at the same time. Mix without lumps.

  3. At the end, add oil or melted butter, mix until smooth and uniform.

  4. Let the dough rest for 15-20 minutes. This will help the pancakes to be soft and elastic.

  5. After the specified time, stir the mixture and heat a little oil in a Teflon pan at a medium temperature.

  6. Pour a small amount of the mixture with the help of a ladle into the pan and spread it quickly in a circular motion.

  7. Fry the pancake for 1-2 minutes on each side until golden brown.

  8. Repeat the process until you have used all the dough.

  9. You can choose your own spread for pancakes from the ones offered, you can also combine, plum, apricot, strawberry jam, ground walnuts, honey, sugar, hazelnut cream and pistachios.

NOTE:

  • Keep the rest of the pancake covered in a plate in a dry place 2 days.

  • Keep the pancake dough in the refrigerator for up to 1-2 days.
