A wonderful sauce combined with peppers and tomatoes. You can combine it with any pasta, and you can also add minced meat filling. It is quick and easy to prepare. Follow recipe.
Ingredients: simple, total time: 25 min. 2 serving
2 Tbsp of olive oil EVO
1 medium onion/ finely chopped
2 clove of garlic/ minced
1 small carrot/ finely chopped
1 fresh red pepper / blended
200 ml tomato paste
100 ml water
1/2 tsp salt/ or to taste
1 tsp each basil, oregano
1 Tbsp Parmesan cheese
Preparation:
Prepare all the ingredients as described above.
Fry the onion in olive oil until it becomes transparent.
Add the carrot and mix, stew for about 5 minutes.
Then add the chopped pepper, stew with occasional stirring for about 10-13 minutes.
When the pepper has softened, pour it into a deep mixing bowl and blend the mixture into a creamy texture.
Return the mixture to the pan, add tomato paste, salt, oregano, basil and a little pepper.
Simmer for about 15-20 minutes, stirring occasionally and adding water.
Towards the end, add grated Parmesan cheese, mix everything well.
Add 1 package of gnocchi to this mixture and mix.
Serve in deep plates with the addition of grated Parmesan.

NOTE:
You can add a little crushed red pepper to this sauce, or you can combine it with tuna or minced meat.
You can pack the sauce in sterile jars and keep it in the fridge for up to 5 days.
You can store this sauce in the freezer in special containers with lids, and store for up to 2 months.
