Ginger Soft Cookies

  • Soft gingerbread cookies made with molasses, cinnamon ginger give a special taste. This recipe for gingerbread cookies rolled in sugar is a favorite treat around the world. Follow recipe.

Ingredients: simple, total time: 35 min., 24 cookies
  • 2 Tablespoons white sugar

  • 2 and 1/4 cups flour/ 00 or type 400

  • 2 teaspoons ground ginger

  • 1 teaspoon of baking soda

  • 3/4 teaspoon ground cinnamon

  • 1/2 teaspoon ground cloves

  • 1/4 teaspoon salt

  • 3/4 cup softened margarine or butter

  • 1 cup of powdered sugar

  • 1 large egg

  • 1/4 cup molasses or honey

  • 1 Tablespoon of water


Preparation:
  1. Preheat the oven to 175 °C.

  2. Separate 2 tablespoons of sugar into a small bowl.

  3. Sift all the powder ingredients into a larger, deeper bowl.

  4. Beat the powdered sugar with the margarine in a separate bowl. Beat until the mixture is creamy and smooth and light in color. Add the egg, molasses and water, mix and gradually add the powdered ingredients until well combined.

  5. Flour your hands and form 24 walnut-sized balls.

  6. Roll the balls in the reserved sugar on all sides.

  7. Place the formed cookies with a distance of 5 cm on the baking paper in the pan and slightly align the tops of the cookies with the bottom of the glass. Bake in a heated oven for about 10 minutes, turning the pan.

  8. Let the cookies cool for 5 minutes on the baking sheet, then transfer them to a larger tray to cool completely. Enjoy in bites!

NOTE: Store these ginger cooled cookies in an airtight container, they will stay soft for days.
