Gabon cake is a rich dessert that combines all our favorite tastes. It is popular for decades for a reason! The juicy crust with roasted ground hazelnut combined with the rich chocolate filling is a feast for all the senses. Ingredients: simple, total time: 90 min.
Filling:
15 egg yolks
300 g of cooking chocolate
250 g of butter/ room temperature
350 g of granulated sugar
2 bag vanilla sugar/ 20 g
Bark:
15 egg whites
300 g roasted ground hazelnuts
3 Tbsp of flour
300 g of granulated sugar
3 Tbsp of prepared filling
Preparation:
Filling:
Beat egg yolks with sugar until foamy until completely combined and becomes a lighter mixture, add vanilla sugar and steam until it thickens into a fine cream.
After that, with constant stirring, add chocolate and melt in steam.
Leave the finished cream to cool.
When the cream has cooled, add the butter and mix with a mixer until it is uniform.
Crust:
Beat 5 egg whites until foamy, then gradually add 100 g of sugar with a spoon and beat until stiff peaks form.
Gently mix in 100 g of hazelnuts, 1 spoon of flour and 1 spoon of the prepared filling by hand.
Pour the mixture for the crust into a greased tray, lined with baking paper (preferably round for a nicer appearance), then bake for 15-20 minutes at 180 °C, depending on the strength of your oven.
You will repeat the process two more times to get a total of three crusts.
When the crusts are ready and cooled, stack the cake by placing the filling on top of the first crust, then repeat the process until you have enough material.
Cover the last crust, as well as the rest of the cake, generously with the rest of the filling.
Place the cake in the refrigerator for 4 hours, or preferably overnight, to cool well and for the crust to absorb the filling.
Decorate with ground or chopped roasted hazelnuts, grated chocolate or ganache cream and fruit as desired enjoy in a wonderful treat and a delicious combination of hazelnut and chocolate!
