Ingredients: simple, total time: 35 min. 14 pancakes
3 eggs
1 bag of vanilla sugar/10 g
pinch of salt
1 big Tablespoon of Greek yogurt
150 ml of carbonated water
1 grated lemon peel
500 g of flour
350-400 ml milk
non-stick Teflon pan 16 cm
oil as needed
homemade or purchased plum jam
100 g finely grounded walnuts
Preparation:
Grind the walnuts finely, and set an aside.
Mix the eggs, vanilla sugar, a little salt and lemon peel in a deep bowl, beat for about 2 minutes, then add the yogurt, carbonated water and mix again.
Gradually add half of the flour to the bowl, mix again at the same time.
After that, add a little milk, the rest of the flour. Work again with a mixer into a compact mixture. Pancake batter should be neither thick nor very thin, something in between.
When you get the desired mixture, take a pan (my pan is 16 cm). Pour a little oil and let it heat up well. When the oil starts to sizzle, scoop the mixture with a ladle and pour it into the pan, turning the pan in a circular motion so that the mixture spreads in a circle. Bake for about 1–2 minutes on medium heat, then with the help of a thin spatula, turn to the other side to brown. Place the pancakes on a shallow plate and cover with jam and nuts. Serve warm. Buon appetito!
NOTE: As a coating, you can also use Nutella, sugar, various other jams.
