A wonderful recipe from my mom that I always apply when I make donuts, Fantastic and soft dough and hollow. You can use jam, Nutella or powdered sugar. As you like. Follow this incredible recipe.
Ingredients: simple, total time: 90 min., 15-17 donuts
500 g soft flour/type 400 or 00
50 g fresh yeast
150 ml of milk
1 Tbsp sugar
1 tsp salt
1 and 1/2 Tbsp butter
3 egg yolks
1 lemon peel grated
1 bag vanilla sugar/ 10 g
plenty of oil for frying 700 ml — 1 liter
Preparation:
In 150 ml of cold milk. Chop fresh yeast, lumps well, then put 1 tablespoon of sugar and 1 teaspoon of salt. Put yeast near the stove and let it soak for 20 minutes.
In a plastic bowl put 1 and a half tablespoons of butter (butter or margarine), 3 egg yolks, lemon peel, a little vanilla sugar, 500 gr. soft flour.
As much milk as the flour requires, mix it all well with the yeast, work the dough with a food processor, beat it well until it starts to separate from the bowl.
Let the dough rise for about 40–60 minutes.
Remove the risen dough from the bowl, sprinkle flour on the work surface, and work the dough with your hands a little more. Take a rolling pin and spread the dough to the thickness 5-7 mm. If you are working with a glass mold, dip it in flour beforehand and take out the forms!
Make after molds for donuts. Take out the donut molds with a donut mold or a glass up to 8 cm wide.
When you have done this, let the dough rest and cover with a clean cloth while the oil is heated for some 15–20 minutes.
Bake the dough in hot oil. Carefully place the formed donuts in the hand and gently place them in the hot oil. If it's easier for you, and you have a metal spatula, flour it beforehand, lay out the donut and place it slowly in the hot oil. When the oil starts to sizzle, it means that it is ready to be fried.
Turning the donuts during baking must be proportionately golden brown. Take out the donuts on a larger tray, being careful not to puncture them. Sprinkle with sugar powder or jam, Nutella. :)

NOTE: If you are making for a larger group, double the quantities.
For risen yeast: put 400 ml of milk, two packages of fresh yeast-84 g, 2 Tablespoons of sugar and 2 teaspoons of salt. In another deep bowl: put 4 egg yolks and 1 egg, 3 Tablespoons of butter, 2 bags of vanilla sugar and lemon peel grated into two pieces. Gradually add flour and milk as needed. Regarding the flour, you will certainly need about 1 kg plus for the work surface. Add flour gradually, remember that the dough should not be very hard, but should just separate from the bowl. Do everything as per this recipe!
