Ingredients: simple, total time: 70 min. 4 servings
5 pork bellies
salt and ground pepper to taste
For the marinade:
1 Tbsp tomato purée
1 tsp mustard
2 Tbsp Olive oil EVO
2 Tbsp balsamic vinegar
50 ml of apple cider vinegar
2 pinches of rosemary/ chopped
1 Tbsp brown sugar
100 ml of water
Preparation:
Separate the cutlets from the bones, beat with a meat pestle, add salt and pepper.
Mix the marinade ingredients, roll the meat in the marinade on both sides, and pour the rest of the marinade and cutlets in a baking dish.
Bake on 180 °C, 40 min, with adding little water as needed.
Cover them with aluminum foil 25 min.
15 minutes before the end, remove the foil, turn the chops to the other side.
When the meat and sauce get a nice color, you can take them out of the oven.
Serve warm with mashed potatoes, rice, some vegetables, and salad.

NOTE:
Keep the rest of the cutlet covered in the refrigerator for up to 2 days.
Heat in a pan and add a little water as needed.
