Crumbled cake is Italian cake, but I have put classic cream with strawberries and give a better taste and aroma of fruits, you can use also other fruits if you like. Ingredients for the Crumbled Shortcrust Pastry: hinged pan diameter 24 cm, easy, cooking in a fan oven at 170 °C for 35 minutes, cooking in a static oven at 180 °C for 35 minutes
Dough:
400 g of flour
150 g of sugar
120 g of butter
2 eggs
1 bag of baking powder/ 10 g
For the Cream and Strawberry Filling Custard:
500 ml of milk
1 grated lemon zest
2 eggs
1 bag vanilla sugar/ 10 g
80 g of sugar/ 4 Tbsp
70 g of flour/ 4 Tbsp
250 g of fresh strawberries in pieces or other fruits what you prefer
if you like vanilla sugar for the sprinkle on the top dough before oven
Preparation:
Dough-Pastry:
Add all the dry ingredients and stir well with your hands. Then add the butter that has stood at room temperature, add the eggs and continue mixing with your hands, so that the dough is homogeneous and lumps of flour disappear. When the dough is ready and homogeneous, do not join it, the dough must be crumbly, take a 24 cm mold, place the baked paper on the bottom and tighten the mold, cut off the excess paper in scissors. Coat the paper and the frame of the mold with butter. Now 1/2 of the crumbly dough, insert in the mold, and lightly tap the dough with your hands, to level it. It must be compact, you can do it with a glass, make sure that the first layer covers a little on the side of the mold, glue the rest of the dough about 3 cm.
When you are done, put the dough in the mold, and line the edges. | leave the rest of the dough to cover the filling.
You will now make the cream for this cake.
Take milk, heat over a moderate heat, add grated lemon peel. In another bowl, put 2 eggs, sugar, and flour and mix with a hand whisk.
When the milk has warmed up, add very little of it to the mixture with the yolks. Stir well, then return this mixture to the milk, put a bag of vanilla sugar and put it back on the stove, stir well the cream until it thickens.
When the cream is ready, pour the dough into the mold.
Prepare the strawberries that you will cut into slices and place on top of the cream.
When you have arranged all the strawberries, sprinkle a little sugar over them, Now take the rest of the dough and sprinkle on the strawberries, the dough must be crumbly on top, cover so that the strawberries are not visible. Put little vanilla sugar on the top dough if you like, bake in oven 170 °C with fan 35 min. Serve chilled cake. Buon appetito!
