Crackers with ground greaves are very tasty and a real delicacy, this is traditional salt pastries in Serbia. They are usually made in November after the pig slaughter, but nowadays, you can certainly buy them ready-made in stores, so that date is not important. This is one of the Serbian methods of preparation. Follow recipe.
Ingredients: medium, total time: 120 min.
500 g of smooth flour
1 bag pack of fresh yeast/ 42 g
1 Tablespoon sugar
300 ml of warm milk
1.5 teaspoons of salt
1/2 teaspoon of freshly ground pepper
1 whole egg
1 teaspoon of fat/ pork, homemade
250 g of ground greaves
egg and 1 Tablespoon of water or milk for coating
Preparation:
Grind the cracklings.
In a small bowl, crush the yeast, add sugar, and a little warm milk. Stir and leave for 10–15 minutes at room temperature to make a foam.
Add salt to the flour, add pepper, stir and make a hollow in the middle. Add the raising yeast (foam), egg, fat, and the rest of the warm milk.
Knead a smooth dough and leave it covered for 10 minutes.
Knead gently and leave covered for another 30–40 minutes in a warm place, to rise.
When it has risen, transfer the dough to a floured work surface and roll it out thinly.
Arrange 1/3 of the ground cracklings in half of the dough and fold in the other part.
Roll out the dough again, top with another third of the ground cracklings, and fold again.
Now repeat this process once more, fill the dough with the remaining ground greaves, fold, and spread to approximately 1.5 cm.
Using a round mold or a glass 4 cm diameter, take out the crackers, arrange them on a baking sheet lined with baking paper.
Beat the egg, add a tablespoon of water or milk, coat the crackers (if desired, lightly salt them or put cumin.)
Do not throw away the rest of the dough, just lightly combine them into small piles (do not knead them anymore) and bake them together with the crackers.
Bake for 20–30 minutes at 180-200 °C. Buon appetito!
