Corn Bread with Cheese and Bacon

  • Since I am a child originally from Serbia, I have a habit of making proja-corn bread, that is, corn bread in the traditional Serbian way. My mother used to make it quite often, not only out of habit, but because it is one of the healthiest meals for breakfast or dinner. Many people make this recipe in different ways, and everyone has their own way of making what they like out of the ingredients. For example, I like a combination with cheese and bacon or pure proja-corn bread, I even eat it instead of bread. One of those is this recipe that I made today according to my taste. Ingredients: cup measure 150 ml, simple, total time: 55 min. 10 servings
  • 4 medium eggs

  • 1 full cup of Olive oil EVO / or a cup of melted fat

  • 3 Tbsp of Greek yogurt

  • 3 cups of mineral water

  • 4 cups flour 00/ white or wholemeal

  • 4 cups of corn meal

  • 1 full tsp of salt

  • 1 tsp of baking powder/ 5 g

  • 70 g diced bacon/ fried with fat

  • 2 Tbsp full Philadelphia cheese

  • sesame seeds for sprinkling/ as you like

  • Baking dish 38 × 25 cm

  • cup measure 150 ml

Preparation:
  1. Whisk all the ingredients except bacon.

  2. Bacon fry in little oil, until well brownish. Then add to the mixture with a fat.

  3. Pour 2-3 Tbsp oil in a baking dish, spread all over sides with help of brush.

  4. Bake for 40-45 minutes at preheated oven to 180 °C.

  5. Sprinkle sesame seeds on top if desired.

  6. Let it cool, corn bread 20 minutes.

  7. Then serve with yogurt, kefir or sour milk.

NOTE:

  • If you use feta cheese, mash it beforehand. In this case, you can also use Gouda cheese with a smaller amount of 100 g.

  • I used a 38 × 25 cm baking dish, hand whisk, and brush for greasing the dish.

  • Keep the corn bread at room temperature for up to 4-5 days.
